Grain from the fields was arriving continuously at the mill's doorstep, and one had to constantly adjust the sails of the windmill to the windspeed ( either to prevent damage, in high winds, or to maximize rotational speed in low winds ).
The mill-stones that would continuously grind against each other, could wear down or cause a fire ( due to friction ) if they ran out of grain to grind.
