Louisiana Creole ( also called French Créole ) refers to native born people of the New Orleans area who are descended from the Colonial French and / or Spanish settlers of Colonial French Louisiana, before it became part of the United States in 1803 with the Louisiana Purchase.

English is the official language and universally understood ; however, because of historic French domination, Antillean Creole, a French-lexified creole language, is also widely spoken.

The Ilois also evolved a French-based Creole dialect now called Chagossian Creole.

Outside Louisiana, and even within, some food writers wish to distinguish between Cajun and Louisiana Creole cuisine, maintaining that Creole dishes tend to be more sophisticated and continental while Cajun food is rural, more seasoned, sometimes spicy, and tends to be heartier.

Later Creole was sometimes used as well to refer to people of African descent born in Louisiana.

Creole languages and pidgins developed from a basis of French are sometimes included among the Oïl languages ( see French-based creole languages ).

Chavacano or Chabacano, (, sometimes referred to by linguists as Philippine Creole Spanish, is a Spanish-based creole language spoken in the Philippines.

The confusion of Cajun culture with the Creole culture is largely due to the confusion of these French cultures by the tourism and entertainment industries ; sometimes deliberately as " Cajun " was discovered to be a potentially lucrative marketing term.

Usually these stations broadcast in native languages such as Spanish or Haitian Creole, but sometimes English, as in the case of a widely heard mediumwave pirate with a Jewish Orthodox format.

Most media and mainstream communication is written and spoken in Standard English, although Antiguan Creole is sometimes used humorously or as a way of identifying with the local public.

The variety from Louisiana is known as Tasso ham and is often a staple of both Cajun and Creole cooking.

Their collective cultures are known as " Creole ", though many non-Louisianans do not distinguish between the two groups, or do not recognize the distinctions made in the New Orleans area between the original white colonists whose offspring were the original first born in Louisiana and Creoles that were a mixture of people of European ancestry and slave populations ( or free men and women of color ) and whose skin was mulatto for lack of a better descriptor.

The 2000 census counted 44, 915 people in the parish who are at least five years old of whom 31, 229 ( 69. 5 %) speak only English at home, 27. 44 % reported speaking French ( Colonial French also known as Plantation Society French ) or Cajun French at home, while 1. 52 % speak Louisiana Creole French.

Casamance, to this day, has preserved the local variant of Kriol known as Ziguinchor Creole, and the members of the deep-rooted Creole community carry Portuguese surnames like Da Silva, Carvalho and Fonseca.

The least prestigious ( most Creole ) variety is called the basilect ; the Standard ( or high prestige ) variety the acrolect ; and in-between versions are known as mesolects.

It was also often just called French music or le musique Creole known as " la-la.

This Creole music served as a foundation for what later became known as zydeco.

Johnson and Keppard's band became the Original Creole Orchestra which toured the Vaudeville circuit, giving other parts of the USA a first taste of the music that was not yet known as " jazz ".
