His chief work is a Historia Francorum, or Libri v de Gestis Francorum, which deals with the history of the Franks from the earliest times to 653, and was continued by other writers until the middle of the twelfth century.

However, in 2004 Dr. Francis X. Gumerlock published an article in Fides et Historia 36: 2 2004: 83-95, in which he decisively demonstrated that the Nicene-Constantinopolitan Creed did not, in fact, condemn chiliasm.

Gregory's education was the standard Latin one of Late Antiquity, focusing on Vergil's Aeneid and Martianus Capella's Liber de Nuptiis Mercurii et Philologiae, but also other key texts such as Orosius ' Chronicles, which his Historia is a continuation of, and Sallust, all of which works he refers to in his own.

The Arcana Deorum is a commentary on Ovid's Metamophoses ; the Dictys Cretensis is a history of the Trojan War ; the Historia Magni Principis Alexandri is a history of Alexander the Great ; the Prohemia Poetarum is a commentary on the lives and works of many classical and Christian authors ; the Defensio de praerogativis et dignitatibus ordinem monasticam concernentibus uses historical examples to defend monastic institutions.

Symeon was author of two historical works which are particularly valuable for northern affairs, the Libellus de Exordio atque Procursu istius, hoc est Dunelmensis, Ecclesie ( The Little Book on the Origins and Progress of this Church, that is of Durham ) and a historical compilation Historia regum Anglorum et Dacorum.

About 1129 Symeon undertook to write a Historia regum Anglorum et Dacorum.
