Established by Mr. Tan Kah Kee in 1921, the university was originally known as the University of Amoy.

He was born to Ross R. Brattain and Ottilie Houser in Amoy, China on February 10, 1902 and spent the early part of his life in Springfield, Oregon where an elementary school is named in his honor, and Tonasket, Washington in the United States.

Both of these words ( 鮭汁, kôe-chiap and kê-chiap ) come from the Amoy dialect of China, where it meant the brine of pickled fish ( 鮭, carp ; 汁, juice ) or shellfish.

There are citations of " koe-chiap " in the Dictionary of the Vernacular or Spoken Language of the Amoy ( London ; Trudner ) from 1873, defined as " brine of pickled fish or shell-fish.

For example, the words " Amoy ", " tea " ( 茶 ; tê ), " cumshaw " ( 感謝 ; kám-siā ), and " Pekoe " ( 白毫 ; ), kowtow ( 磕頭 ; ), and possibly Japan ( Ji ̍ t-pún ) and " ketchup " ( 茄汁 ; kiô-chap ) originated from the Hokkien.

As well as ceding the island of Hong Kong to the United Kingdom in perpetuity, the treaty also established five treaty ports at Shanghai, Canton, Ningpo, Fuchow, and Amoy.
